Potato Skin
The inspiration is from T.G.I Friday but I got this recipe from my friend, Santy, from Maryland..Thank you Santy!
Ingredients:
4 medium Russet Potato
1/3 cup sour cream
1 Tablespoon fresh snipped chives
1/2 stick butter, melted
1 1/2 cup shredded cheddar cheese
5 sliced bacon, cooked and chopped
Pre-heat oven 400F, bake potatoes for one hour. As potatoes are baking, mix the sour cream with chives, covered and place in refrigerator. When potatoes are cool down, make 2 lenghtwise cut through each potato, resulting in three 1/2-1/3 inch. Discard the middle slices or save for mashed potato.
With spoon, scoop some of the potato out of each skin, being sure to leave about 1/4 inch of potato inside the skin.
Brush the entire surface of each potato skin, inside out with melted butter.
Place skin on a cookie sheet, cut side up, and broil them for 6-8 minutes or until the edges turn brown.
Sprinkle 2 to 3 tablespoon of cheddar cheese into each skin, rumble the cooked bacon and sprinkle 1 to 2 teaspoon of bacon pieces onto the cheese.
Broil skin for 2 more minutes or until the cheese is melted.
Serve hot with sour cream.
