Sleepless in Tacoma

been a while, am sorry my dear blog...so eager to manage my house and my 4 year old little lady. Exhausted, but I'm grateful with the amazing thing happen in my life lately, it's part of my pray to God, asking all the goodness of Him flowing into my life.

When I look back into my life, I feel incredibly lucky, I don't need to complain. I lost my mom who died of lung cancer, I was beside my husband in his last breath battling with colon cancer. In the minutes he died, right away I asked God for big entertainment for me and my daughter. We cried, because we're just normal human being, we're sad, because we love him so much! but I never stop believing the goodness of God. When you ask God and ordinary thing, you will get just ordinary thing, but when you ask the extra ordinary, you will get the extra ordinary things. That's why since I was kid, I was always a big dreamer. That's why I said I'm lucky because I was able to let go of the unfair past, moved forward and....smile to the world.

I believe in God, and I become extremely aware that even the impossible thing you can't think about will happen and usually beyond your expectation when you're in deep faith.

I love this lent season, not because I love Friday fish day, but because it's the best time to review our self that there always something to be grateful in any circumstance. I reached my milestone as a mother of young child, I am proud of myself, I don't need to worry about when my daughter become teenager, she will be okay, I keep praying for her, God will guide me, God will pour me with all His goodness. ..be happy!

Bread Pudding

This is really good if you have lots of day old bread!...but I make this only once in a while, since I don't eat sugar in a daily basis!...this is just to indulge yourself in your 'sometimes' breakfast....enjoy!

Ingredients:
2 cups granulated sugar
5 large beaten eggs
2 cups milk
2 teaspoon vanilla extract
3 cups cubed Italian bread, allow to stale overnight in a bowl (I use my grain bread)
1/2 cup packed light brown sugar
1/4 cup (1/2 stick) butter, softened
1 cup chopped pecans

For the sauce (optional)
1 cup granulated sugar
1/2 cup (1 stick) butter, melted
1 egg beaten
2 teaspoon pure vanilla extract
1/4 cup brandy

Directions
Preheat the oven to 350 degrees F. Grease a 13 by 9 by 2-inch pan.

Mix together granulated sugar,eggs, and milk in a bowl; add vanilla. Pour over cubed bread and sit for 10 minutes.

In another bowl, mix and crumble together brown sugar, butter, and pecans

Pour bread mixture into prepared pan. Sprinkle brown sugar mixture over the top and bake for 35 to 45 minutes, or until set. Remove from oven.

For the sauce:
Mix together the granulated sugar, butter, egg, and vanilla in a saucepan over medium heat. Stir together until the sugar is melted. Add the brandy, stirring well. Pour over bread pudding. Serve warm or cold. (recipe courtesy of Paula Deen)

Blessed Birthday

God is directing every one of your steps. He has already lined up solutions to your problems.....that's the word from Joel Osteen that I got from my twitter, today And it's very nice,...when we believe in God, we're not worry, we're not afraid. Many times when I was in the middle of party, or crowded area, I felt 'alone'...not lonely, probably because I'm not so good being party goers, but being alone right now without my hubby by my side anymore, I don't feel lonely, I feel that all friends from arround the world, sending me warm birthday wishes, and that's something I should grateful again and again. Every blackberry messenger that I got from any of my friends, is like pouring rain after long drought...it's sooo fresh!....also from facebook.

I still have Grace's grandma, someone that I can talk to, I still have many friends here in other states that just one dial, that I can chat with....I have a daughter who always keep me busy because she always forget where she put the game or her stuffed animals.

So, am so blessed with all above and with chocolate mousse cake for my birthday,...thank you God.
